why are there holes in bread?

Answers

In 1859, Louis Pastuer discovered how yeast works, it feeds on the starches in the flour producing carbon dioxide. This gas expands and makes the dough rise, but it needs an exist when it is expanding. It makes little air pockets and then explodes - there is your holes.
