I think that ethanol is a scientific work for "alcohol". Maybe "etoh" is an abbreviation doctors use so patients won't know what they're talking about.

Ethanol is a kind of alcohol, which is really any hydrocarbon compound with an OH group stuck on the end somewhere. EtOH is an abbreviation for ethyl alcohol, but there are others; MeOH, for example, is methyl alcohol (aka methanol, the stuff you can't drink).
