Don't know if we've covered this. Anyone have a good pancake recipes or a story to go along with them? We started making this recipe when we discovered black raspberries-even though the recipe is for blueberries- on the property we were renting a few years ago.

Whole Wheat Blueberry Pancakes: 1 1/2c whole wheat pastry flour...2T baking powder...1/2c wheat germ...1t. salt...1 1/2c milk...2 eggs, beaten...2T vegetable oil...2T honey...1 1/2 berries...Mix dry...mix wet...add berries...cook. Delicious with real maple syrup and eggs.

Buckwheat Pancakes: 1/2c whole wheat flour...1/2c buckwheat flour...1t. baking powder...1c milk...1/4c. water...2T honey...1 egg...2T vegetable oil...mix just til moistened. Do not overmix, batter will be thin. Especially good with fried taters and onions.

My favorite pancakes are sourdough starter mixed with an egg, baking powder, sugar and fresh diced fruit.

Well,since I had to eliminate milk,I found that you can substitute water & oil for milk. 3 TBS oil in 1 cup H2o.

I love the purple royalty raspberries for pancakes.They're a cross btwn red & black raspberries.Tasty & less seedy.I also used dried alpine strawberries and dried blueberries mixed in with the batter.Yum. Now I'm hungry.

We eat pancakes a lot. I love them with any kind of berries. Also apple/cinnamon is very tasty. And there's always chocolate chips! Now I'm hungry, too. Nancy

I don't use any great recipe but I have fond memories of my mom saying "hey kids how about pancakes for supper"we would think what a treat!Years later it hit me that we didn't have anything else to eat at those times.Thanks to mom's positive thinking she turned thin times into good times.

hey jim that sounds familiar! my mom always seemed to make something even though it looked as if we had nothing! those are some of my fondest memories of growing up. i've also learned you can almost always make do with what you have! cindy

One morning my attempt at blueberry pancakes resulted in a very un-appetising shade of gray. Happily, they tasted better than they looked. The kids now ask for "elephant" pancakes.

These are the best pancakes I have or will ever make. I got the recipe from GN's y2k food board. (Remember that?) 100% Whole Wheat Pancakes That Melt In Your Mouth*

1.5 Cups Whole Wheat Flour 1 egg 1 Cup Milk 1/4 Cup Honey 3 Tablespoons oil

Mix the above thoroughly and let sit at room temperature for at least 7 hours--overnight is great. (This is the key.) When you are ready to cook the pancakes, stir in:

3 Teaspoons Baking Powder

If needed, add more milk to make the batter the proper consistency.

DON'T FORGET TO ADD THE BAKING POWDER

We have apple pancakes on Sunday. Sliced apples, sauted in butter, brown sugar and cinnamon, not too soft. Then pour pancake mix over and bake in 350 oven until golden brown. Put plate over top and flip. Cut like a pie and serve with warm maple syrup. Works great with buttermilk, oatbran or wheat pancakes. WOW! I think I just figured out what to have for dinner.
