Sweet Potatoes and Sweet Potato pie (Country Kitchen)

Sweet potatoes are ready to can. I can them in water and maple syrup for conveninece and keep fresh ones also. They're really good baked and served with a salad on the them with Italian dressing.

Does any have good recipes for sweet potatoes? I've never made sweet potato pie before. I think I tried it once and like it. Will someone post a recipe? A friend slices and fries hers, haven't tried that, either. Thanks

I really love sweet potatoes. Our favorite way of preparing them is roasted with chicken or turkey. I roast the turkey with onions and celery. Parboil white potatoes, carrots and seet potatoes. Then I add the vegetables the last 30 -40 min. basting them often with lots of salt and pepper. Out of this world. The flavors combine beautifully. I have also roasted a big oven full of sweet potatoes and then froze them. Very convienent. Just thaw, heat, add butter, salt and pepper and a great dish, especially for babies. Between this post, Hoot's post and the one about pumpkin pie, I'm getting very hungry for Thanksgiving.

I have made sweet potato pie the same way as pumpkin pie -- just substitute cooked, mashed sweet potatoes for the cooked mashed pumpkin. Same spice, seasonings, baking times -- or add some of your maple syrup, that would be really tasty. Even w/o syrup, I thought it was tastier than pumpkin pies.

Here's 3 we like. Nutty Sweet Potato Biscuits 2 3/4 cup. All purpose flour 4tsp baking powder l 1/4 tsp. salt 1/2 tsp cinnamon 1/2 tsp nutmeg 3/4 cup chopped nuts 2 cups mashed sweet potatoes 3/4 cup sugar 1/2 cup margarine, melted l tsp. vanilla Combine first six ingredients in a large bowl. Mix together the last four ingredients and add to the flour mixture. Mix well. Turn onto a lightly floured surface and knead lightly. Roll dough to 1/2 in thickness cut with a 2in cutter and bake for 12 minutes at 450* or until golden brown. Sweet Potato Pudding 2 lbs sweet potatoes cooked and mashed l cup sugar 2T. butter l egg ltsp lime juice ltsp allspice ltsp cinnamon Beat together and pour into a greased baking dish. Bake at 350* for l 1/2 hours Sweet Potato Pie cook and mash 3 cups sweet potatoes. Beat an egg in 2 cups milk with a tablespoon of vanilla or maple flavoring and add to the potatoes. Stir in a stick of melted margarine and lcup to 1 1/2 cups brown sugar. Then put it in an iron skillet and bake it at 350*. Stir it every 10 or 15 minutes and when its real thick spoon it into a baked pie shell. This is an old Tennessee recipe. The ingredients don't have to be exact for it to come out good. YUM, Ciny, Lucky you! I love sweet potatoes, and tried growing them once, but they didnt do well(in Wis). Must not be enough of a growing season! Our family loves them baked, as you would a regular potatoe, then slice it open and add a bit of brown sugar and cinnamon. As good as any dessert. My kids love this, especially if this is the VEGGIE of the night. Ive also used the baked ones instead of pumkin in a muffin recipe.Good Luck, Carrie in Wis

Cindy - I got this recipe from my mother-in-law when I got her son. Sweet Potato Pie 4 TBS butter, 1/2 cup sugar, 3 TBS lemon juice, 1 TBS lemon rind, 3 eggs - separated, 1/4 tsp cinnamon, 2 cups mashed sweet potatoes, 1 cup light cream (1/2&1/2), 1 unbaked pie shell or graham cracker crust (our favorite).

Mix all ingredients except egg whites. Beat them separately and fold in. Pour into shell. Bake at 425 for 10 minutes, then at 350 for 40 + minutes. Knife should come out clean. hope you love as much as we do.
