Canning Recipe for Tangy Tomato Cocktail Juice

Here's a recipe for canning tomato juice that I've made for years. We really like it, so I want to pass it on.

Tangy Tomato Juice Cocktail:

20 lbs. firm ripe tomatoes 2 TBSP. salt 1 tsp. celery salt 3 TBSP. Worchestershire sauce 2 tsp. onion powder 1 tsp. tabasco 1 TBSP. Garlic

Put thru ricer & then taste it. If juice is too tart add 1 - 2 TBSP sugar. Heat mixture to boiling. Pour into sterilized QT. canning jars. Screw on lids & can in boiling water bath 15 minutes.

Jane, I made this juice today and it is great! I didn't have worchestershire sauce, so I just left it out, but I did add a little extra heat, just a pinch of cayanne pepper. This is going to be a regular from now on! Thanks, Cathy

Jane, I made a batch. Had almost 2 quarts left over. The next morning some friends were visiting while I was putting up plain juice. I needed a bit of your juice to finish off a jar and asked them if they'd like to taste it. When I turned around again, it was all gone and they wanted the recipe. Apparently, it is very good! I sent them home with a bucket of tomatoes and all the seasonings measured into a little container so they wouldn't have to run to town for what they didn't have. Gerbil
