What are the advantages/disadvantages of using longer developing times at hight dilutions, beyond better control over the whole process? Do I get higher sharpness? more grain?

Generally you'll get slightly better acutance, slightly more graininess, and perhaps put a bit of a shoulder into the curve shape.These differences can be rather subtle (D-76 1:1 vs 1:3) to more obvious (Rodinal 1:25 vs 1:100).
If you want to try it, if you double the dilution give about 1.4X the development time. You may find an EI decrease, maybe not.

If you live in an area where the water is high on carbonat, you better use "destillated" water. I get truble with ID11 1 + 3 and Ilford Delta 400.
