What has bread got to do with chemistry?

Baking anything has to do with chemistry. The ingredients we use to back are chemical in some form or another and combining them to make something else is just like performing a chemical experiment. Things like baking soda, eggs, air, and other ingredients react with each other to form larger air bubbles or new chemical compounds and adding the heat of the oven provides yet another portion of the equation chaning the composition of the ingredients again. The Magic School Bus show has both a video (Ready, Set, Dough) and a book (" The Magic School Bus Gets Baked in a Cake"????i think) that explain it in term simple enough for children, but I don't know about anything more technical than that.
