When to start giving moist cat food

I have a 1 yr old(appx) maine coon type that I just bought some moist food for. Currently he weighs about 9.5 to 10 lbs. He has been on Iams kitten food, and was wondering should I add some moist food for a treat at night(about 1/3 of a can) or should I continue his current diet. Also, I know mc's stay on kitten food longer than most, how long should he stay on kitten food? He eats and drinks well and seems perfectly healthy, happy, and playful. Your input is welcomed. I don't like Iams or Science Diet, as they contain meat "by-products" which can and do include such lovely things as hooves, beaks and even road kill. I recommend Wysong's instead.
