making violet syrup

Anyone out there know how to make violet syrup. An old friend once told me how to with violets, lemon juice sugar and water (the lemon juice makes it turn violet). I can't remember how he said to do it! I've got lots of violets just now and would love to try something with them.

Answers

Pour 2 cups of boiling water over 6 cups of violet flowers and leave overnight.

Strain and discard flowers.

Combine liquid with 2 cups of sugar.

Boil until syrup thickens.

How about violet jelly. It's the prettiest of all jelly, Pick 2 cups of violet petals, rinse, Put petals in a jar, pour boiling water over petals to cover, put on lid, let sit 24 hours, it will get ugly and smelly, strain. Put 2 cups of infusion in large pan (or jelly pan) add 1 box of pectin, and juice of one lemon, bring to boil, add 4 cups of sugar bring to boil again, boil for 1 minute. Skim, jar and seal. It's mild flavored and has a beautiful fuscia color. If you want the recipe for dandelion jelly e-mail me.

Sorry Patti but you will get your own back when it is end of Aug. and the Ozarks haven't had any rain for 2 months!!!

There is a folk tale here about going to heaven and seeing a man struggling in chains. Turns out it is spring time in the Ozarks and he wants to go home!
