Rollover images on the web, what can I expect speedwise?

Hi Everyone. I'm very happy to have found this site. After a recent total disaster with building a "simple" web site for my images, I decided to create a new, "less" simple site with Dreamweaver 3 software. The bulk of the site is made of rollover images (usually just fancy text from Word "Wordart" transported to and then modified in PS5), which are clicked to bring up a new screen. I have been using the following process to create transparent gifs, and I wonder what is going to happen, as far as download speed is concerned, when I upload to my server:

1) I create a transparent gif in PS5 (under 'export transparent image'), using "Web", "diffusion", "save exact colours" from the dialog box. I've been choosing yes to the interlace option, even though I have no idea what interlacing is?

2) I create another gif in PS using the same process, with whatever modifications (i.e., I use the same image/text, but add a text layer that says, for example, "go to images".

3) I use Dreamweaver 3 and create a rollover image out of the two transparent gifs. I do this straight in accordance with the non-html dialog box.

Am I going to have problems with speed using this setup? As I say, most of my site is built around this type of 'philosophy'.

If I have been saving everything wrong, etc., is it possibly for me to modify my gifs in order to optimise them? or should I start from scratch with the right settings (I have the original PSD's still...).
