i am planning on buying an LS-30 and an Epson 750, but I don't really know what kind of output I can expect. How large would I be able to make prints?

The 750 will allow you to make a print 8 inches wide and up to 44 inches long. An inkjet printer needs between 240 and 300 dpi image resolution for proper printing. This is not the same as printer resolution which is the spacing of the ink droplets on the page.

The Nikon & Epson combination you mention will produce excellent results, although depending upon the editing software you use it can appear a bit difficult at times.

A good source of info on Epson printers can be found athttp://www.egroups.com/group/epson-inkjet/ and for scanning http://www.egroups.com/group/scan/

Also have a look at Digital Darkroom - http://come.computerdarkroom

At my own web site I have afair amount of detail on usinf both the Epson and Nikon, but strictly within a Photoshop 5.x environment.
