It may still be in print...if not your local used book store may have a paper back copy of Laurel's Kitchen. Its a wonderful veggie/survival cook book with lots of soy uses. I have tons of cookbooks, but this one is right at the top of the list. And we are not vegetarians.

A quick soy snack.

Soak your beans overnight, then drain on a paper towel (or several) for an hour or so. Heat some oil in a skillet - enough to cover a layer of beans, then add the beans, only one layer deep. They will do all manner of interesting things as they cook. Mostly run around in the oil. When they brown lightly, take them out, drain, and add a bit of salt, and a lot of garlic powder (or not so much, if you prefer). They taste something between peanuts and popcorn.

enjoy

An even quicker soy snack.

Into one cup of rapidly boiling water slowly stir one cup ground soy. Cover. Remove from fire., Cover pot with an insulated something. Fifteen minutes later you have naturally sweet soy grits. Looks like cream of wheat. One cup soy 70 protein grams.
