This cheese will have the tart flavor of yogurt, and is wonderful for many occasions and for parties. Can also add herbs. I use yogurt purchased at the local grocery store, but understand that fresh home made yogurt works much better. Always buy the freshest yogurt you can find.

Let yogurt stand at room temperature for 2-3 hours. Poor one gallon of yogurt into a cheese cloth (make sure the cheese cloth is VERY FINE WEAVE or it will all drain out) lined colander. Tie the four corners of the cheese cloth into a knot, let drain for 12-24 hours, or until it quits dripping. Take the cheese from the cheese cloth, (you might have to scrape with a stainles steel spoon), and put into a glass bowl. Salt to taste. Refrigerate until ready to serve.

Other suggestions for ingredients: ciniman, nutmeg, allspice, vanilla, chopped fresh chives, dill, chopped garlic, black pepper.

suzy - thank you for all your cheese making info. I used to work in an office of a WA Cheese Co., it was fascinating to watch the raw ingredients go in and then the big mixing blades go in very long trough like containers and pretty soon the curds started to come to the top, it didn't take long and I always bought the curds for cooking, they were great in casseroles and such.
