The numerical format for Wednesday was 11-17-1999. All of the digits were odd.

The last Odd day will be 11-19-1999. (Today)

The next Odd day after that will be 1-1-3111 - which is well over a thousand years away, which we will never see.

Oh OK, sorry just got out of bed and haven't finished my first cup of coffee. I guess you are counting the individual digits instead of the whole number as in 21 being an odd number but the 2 in 21 is an even number.
