WHAT IS BEST FOR DOING 360 PANOS

Which camera and which software would you folks use to achieve 360 panos for architecture and inside shots of homes, would love for my viewers to see parts of the ceiling too.

Most any camera would do, look for one with wider-angle capability. (For instance, we're just testing the Canon PowerShot A50, which has a zoom lens that goes out to a 35mm equivalent of 28mm. The Kodak DC210 also has a 29mm equivalent on the wide-angle end of its zoom.) The software is a no-brainer: Get QuickStitch 360 by Enroute Software - Their panorama stuff is a clear winner, IMHO. The 360 product only stitches one level of images (eg, won't stack them on top of each other the way their standard panorama product will), but a useful trick is to shoot all the panels in "portrait" mode, using the wider dimension of the frame vertically...
