detail in background of digital images

I have an Epson 750z digital camera and an Epson Photo 750 printer. I have been very happy with both products. When I print my images the objects or people in the foreground are clear and very "photo-like". What I recently noticed is that some of the background details, especially if out of flash range and depth of field, don't look natural. This seemed especially noticeable with woodgrain furniture or floors with patterns instead of fading to black in the distance they become of sea of colored noise. However dark shadows or dark clothing didn't seem to have any colored noise in them. Is this to be expected with a digital camera? Are there digital cameras that handle this better than others? Does the JPEG compression of the camera make this worse?
