Can anyone put me in contact with an existing business that uses digital recordings of assets or creates inventories for insurance claims and/or insurance co's.

I can't directly, but Kodak has a lot of application partners, and undoubtedly one in the insurance business. Check out the www.kodak.com site, and browse around looking for "Solution partners" or something to that effect. If you're persistent enough, you're sure to find someone!
