Mahimahi (dolphin fish), onaga (longtail snapper), opakapaka (crimson snapper), ahi (yellowfin tuna), aku (skipjack tuna), shutome (swordfish), opah (moonfish), uku (gray snapper)

Thanks for the update on the "favorite fish" available on the islands. When I had my first experience eating Mahimahi I was wondering if I were eatting Flipper. Back here in the East, grouper is a very popular fish. Do you prefer your fish cooked or raw (as I remember some being served?)?
