Low Fat Mayo

I found lots of good mayonnaise recipes on this site but I am looking for a low fat one (that is also a cold prepared mayo)? Do you know of any? Thanks, Susan Austin Dietetic Intern

You might try looking up "tofu mayonnaise recipes" on a search engine-- I found several--and try out those you think you might like. They're all done in the blender all at once (no dribbling in of the oil), so the consistency is not quite the same.

Mayonnaise is made with egg yolk, and egg yolk is high in fat (including cholesterol). I can't tell you how to make low-fat mayonnaise, but I can tell you that it can't be done with egg yolk, so it can't really be mayonnaise. Maybe the tofu stuff listed above would work.

Don, you're right. If it doesn't include egg yolk and oil, it isn't true mayonnaise.

Susan, I came up with this recipe a few years ago. You can leave out the garlic if you want to. Enjoy!

Imitation Aioli (Garlic Mayonnaise)

1 box (10 ½ oz.) Lite Soft Silken Tofu 3/4 C. non-fat cottage cheese 8-10 cloves garlic, peeled 3/4 tsp. salt 1 tsp. apple cider vinegar

Combine all of the ingredients in a blender or food processor. Process until smooth. Makes about 2 cups.
