Freezing bak choi?

greenspun.com : LUSENET : Countryside : One Thread

Hubby just was given about 15 large heads of bak choi. Can you freeze it and if so how? Sounds yummy huh? :~)!

It is that crunchy cabbage type Chinese vegetable. It looks a little like a cross between celery and cabbage. My husband thought it was Swiss chard.

I believe you can make saurekraut out of it. Just use a recipe for cabbage.

You can freez, it, just like you would freeze spinach. Just parboil or steam it till it's limp (takes a little longer than spinach, but not much), drain as much liquid as you can, and then freeze it. I'd leave out the thick, white stems.... they get kinda gross and mushy when they thaw.

Thanks all! Believe it or not I have already used 3 heads of it. YUMMY! We steamed the first head and ate it with some homemade bread and homemade mozzerella cheese for dinner. Today we ate a couple of heads stirfried with chicken and garlic and soysauce. Served it over rice. We took it to potluck and there was not a stitch of it left over! I am going to freeze some of it and use the rest in stir fries. I like it that way best I think! Now I am thinking that I need to plant some this year! We liked it almost as well as spinach and swiss chard and it is sooo good for you. Thanks again!
