Corn variety for Canning

Last summer was my first using a pressure canner. I canned a bi-color corn called Phenomenal. We also froze some of this variety of corn as well as a couple other varieties. I am happy with the taste of the frozen corn but not the canned. Anyone have any favorite varieties that work out well for canning? Thank you!

We really like STOWELS EVERGREEN.It is an open polinated,heirloom var. that makes a nice size ear and has good old fashioned corn flavor.(I am not much for the hybred var. that taste like candy,sugar etc.)It cans,freezes and creams well. Best fresh eating corn too.

There is an additive that my Amish friend uses to can corn. She gets it from E and R seed . It is an Amish seed catalogue. I think that Berlin seeds has it too. I forget the name of the stuff. It is some sort of acidic stuff in powder form. I have another friend that uses vitimin C crystals in hers. I think that it is basically the same thing. I have had some of the "Amish" canned corn and it really tastes a LOT better than the regular canned corn without the additive. I have plenty of room to freeze mine and that is how I do mine every year.

I've not been too satisfied with the results of any variety of corn that I've canned. I live at 6500 feet, so the extension service advises canning it at 15 pounds pressure, for 90 minutes. This seems to really make it taste 'overdone'. Other people have really liked corn that they have canned, and if I wasn't such a worry-wort about wiping the family out with food poisoning, I'd try it at a lesser pressure or time. Any idea where the Amish catalog is printed, or if they have an address? Thanks, Jan

E and R seed company is only accessible by mail. It is 1356 E. 200 S. Monroe, IN 46772. I looked at my seed catalogue from E and R and couldn't find what I was looking for. The Berlin seed company has it for sure on page 10. It is called corn canning acid. I just found it. That address and phone is 3649 State Route 39. Millersburg, OH 44654-9689 and that phone for the Berlin co. is 330- 893-2091. I wonder if regular citric acid powder would do the same? It would be cheaper. The additive is a huge improvement over regular home canned corn. It is really fresh tasting. Tasted a whole lot like frozen. Of course, nothing will taste as good as fresh out of the garden! YUM! Better than that......fresh off the stalk while you are still standing out there hiding from the kids! heeheehee!
