I use the leftover pickle juice from pickled beets which makes a nice pink pickled egg and has such a neat flavor. I just can my beets in vinegar with some salt so they are sour enuf for me. I loveem Cindy

Look under the Kitchen (Food Preservation - Other) category and you will find several threads on pickling eggs. In addition, if you go to www.google.com and search on pickled eggs, you will be 30,300 hits.

For a homesteader selling pickled eggs can be a possibility. From my e-book book:

An option may be to pickle boiled eggs and sell them to taverns. Across the bar they are usually $.99 each, or about $12 per dozen. Even selling at $.50 each, that is $6 per dozen and the pickling incredients don’t cost much. You may be able to buy large jars at restaurants. In my local supermarket a 16 ounce jar of pickeled eggs (about a dozen medium eggs) is $5.20.
