Does anyone have a low-fat granola recipe?

greenspun.com : LUSENET : Countryside : One Thread

Hi All,

Hubby and I are doing the Weight Watchers diet. We both love granola, but, we need a recipe that has been cut back fat and calorie wise.

I have alot of granola recipes, but, I'm not sure about cutting it back myself. I'd rather look and see some other recipes first.

If you have any recipes like this, send them my way.

Thanks alot,

Marsha

Feel free to add any goodies that you like: raisins, dates, nuts, etc. The wheat germ gives it extra nutrition and texture.

8 cups old fashioned oats (not quick oats) 1 1/2 cups light brown sugar 1 1/2 cups raw sunflower seeds 1 1/2 cups wheat germ 1 1/2 cups shredded coconut

1/2 cup vegetable oil 3/4 cup honey 2 teaspoons vanilla 1/2 teaspoon salt

Preheat oven to 350 degrees. Mix the dry ingredients together in a large bowl. Heat oil, honey and vanilla in microwave on high for about 2 minutes or until hot and bubbly. Stir well and pour over dry ingredients. Stir vigorously until granola is well coated. Pour mixture on cookie sheets with high sides (we use jelly roll pans). Mixture can be piled high on the pans. Cook for about 15 minutes until granola is browned stiring after each 5 minute period.

Granola can be stored in the refrigerator for up to 2 weeks in air tight ziplock bags.

My recipe has NO added oil: 13 C rolled oats, 2 C whole wheat flour, 1 C wheat germ, 1 C nut meal(I grind pecans really fine for this), 1 C slivered almonds. Mix well. Stir 1 TBSP vanilla into 2 C fruit juice (I use orange). Mix juice into oat mixture. Use more juice to stick everything together if desired. Spread into pans to about 1 inch deep. Bake at 250 degrees until crisp, stirring every 20 minutes. It takes a couple hours. After cooling stir in whatever dried fruit you like. I especially like cranberries and blueberries.

Granola Cereal

Dry Part 8 cups of freshly rolled oats or oatmeal ( In place of part of this, I roll barley, millet, buckwheat and even sometimes basmati rice)

3 cups freshly ground whole wheat flour

1/2 Tbs. salt

The rest of these are optional, and you can add other things that you would like.

1 cup raisins

1 cup pecans, or any other nut or combination of nuts

1 cup sunflower seeds

1 cup whole millet ( I only add between 1/2 and 3/4 cup)

1 cup dried pineapples or other dried fruits

Wet Part 1/2 cup water

1/2 cup cold pressed olive oil

1/2 cup molasses

3/4 cup honey

2 Tbs. vanilla

Combine the dry all together. I then sprinkle cinnamon on top of this dry stuff and mix it in. If you like to taste your cinnamon more, than sprinkle it on top after you have it in the pans. Combine the wet all together. Mix the 2 together. Spread out in 2 cake pans. Bake at 250 degrees for one hour, stirring every 15 min. Let cool and then store in either a jar, or a plastic container.
