Does vital gluten ever go bad? I bought some today that expired 8-20-01. I didn't see the date when I bought it. Thanks.

Response to vital gluten

If you are talking about dry vital wheat gluten, I don't think it goes bad. I buy it in bulk (5 lb bags) and keep it a couple of years sometimes and it works fine. (I use it for bread making)I store it in thick plastic bags or glass jars in normal room temperatures.
