recipe for crackers

Does anyone have any good recipes for homemade crackers? I am making a soft (chevre) type cheese to give as gifts and would like to bake some crackers to go with it. Any ideas? thanks cara

This is from Laurel's Kitchen; I've made them successfully several times. These crackers are very tasty, but they are rather brittle, so you would have to pack them carefully. As written, the crackers are quite large. You can cut them in quarters before baking them.

1 cup WW flour 1/4 cup cornmeal 1/4 tsp baking soda 1/4 tsp salt 1 tsp brown sugar 1/4 cup melted butter, divided 1/4 cup warm water 1 TB vinegar sesame seeds

Preheat oven to 400. Mix dry ingredients together. Add 2 TB of butter, and the water and vinegar, and mix. Knead until it all holds together well. Cut into 16 pieces. Spread some sesame seeds on the counter, and roll a piece of dough into a paper-thin wafer over the seeds. Place on an ungreased cookie sheet and brush with the remaining butter. Bake for 5-7 minutes, until golden brown.

This is my 94 yr old grandma's favorite cracker receipe. They can be very addictive :-)

3 cups quick oats 2 cups flour 1 cup wheat germ (optional) 1-2 tsp salt 3/4 cup oil 1 cup water

Mix dry ingredients together. Whip oil & water together. Then mix two together. Roll out on a large ungreased cookie sheet, and use a knife to mark cut outs. **Note the thinner your roll out the dough the crisper the crackers will be. ** Bake at 350 for approximately 20 minutes.

Another family favorite is my mom's Sesame Thins:

1 cup whole wheat flour 6 tablespoons oil 1/2 cup water 1 teaspoon salt sasame seeds

Emulsify oil and water, then add dry ingredients. Knead for 5 minutes and let rest for 10 minutes. Divide into 2 parts and roll each part on an oiled cookie sheet. Salt and sprinkle with sesame seeds. Prick with fork. Bake at 350 for approximately 10 minutes.
