checking whole wheat flour

Reading the posts about baking bread made me wonder..... I have several containers of whole wheat flour in my refrigerator. ( No room in freezer). How long will they keep under refrigeration. How will I know if they are rancid and no longer useable? Thank you.

Connie - I have kept whole wheat flour in my refrigerator for several months before. Never had any get rancid. You will know when you open the container, if it has turned rancid. It will smell nasty. Hope this helps you. Winona

I am still using up whole wheat flour from our Y2K stocks, it was stored in air tight 5 gallon buckets with bay leaves on top, it is not rancid, and bakes up just fine!

Trust your nose to tell you when it has gone bad, it will smell like it is bad!
