how to store garlic bulbs

I have difficulty keeping heads of garlic because the garlic cloves always dry out. I do live in the desert with low humidity. I try to keep them in the ground as long as possible, but I do sometimes buy them at the store when they are on sale. Any hints on how to keep them from drying out?

We just tried some of our pickled garlic that we made 2 months ago and it is pretty good! keeps this way for 2 years in the fridge. Go to the archives below and look under kitchen/canning, there are several threads on how to do this. It's a little work, but better than wasting the garlic if it dries out.
