need apple receipes

ok,, have a couple bushels of apples. Need ideas for them. Im not a big applesauce eater. And Im drying some for use later. Any ideas with receipes? apple butter comes to mind,, but Ive never made it. Thanks

I'm going to be in the same boat as you as I'm going to buy a couple of bushels at the farmers market. We eat a whole bunch and I usually stew a bunch to put on pancakes or have with yogurt but I know there has to be lots of other things I can do with them.

I was never that big on applesauce either until I tried homemade. Try a batch, you may change your mind. Peel core and chop your apples, cook down until tender in just a little water, enough to cover the bottom of the pot. Run through a food mill if you want it smoother. Add sugar to taste. Yum!

I found some great apple recipes here, and I really liked that they were all made from regular ingredients that I already had in the cupbaord.

make apple pie filling and freeze, then just put in a pie crust when ready.The ball blue book has a apple pie receipe.

Here's a delicious recipe of my aunt's. I could sit down and eat the whole thing!

Apple Coffee Cake

Batter: 1 ½ cups sugar 2/3 cup oil 2 eggs 1 cup milk 2 teaspoons vanilla 3 cups flour 4 teaspoons baking powder 1 teaspoon salt

Filling: 4 large apples, sliced thin or grated ½ cup light brown sugar 2 Tablespoons flour 2 teaspoons cinnamon 2 Tablespoons oil

Frosting: ¼ cup melted oleo 1 ½ cups confectioner's sugar 1-1 ½ Tablespoons hot water

Combine sugar, oil and eggs. Add milk and vanilla and beat. Stir in dry ingredients. Beat until smooth. Spread half of the batter in a greased and floured 9x13 inch pan. Place apple slices evenly on top of batter. Combine the other filing ingredients with a fork and sprinkle over the apples. Pour remaining batter over filling in thin, even strips. (Be sure to cover filling while pouring because it's next to impossible to spread the top layer of batter) Bake at 375° 35-45 minutes. Let cool 10 minutes. Drizzle with frosting.

I usually mix the batter last, as it seems to stiffen as it sits, making it more difficult to pour the second layer. So I fix the apples and cinnamon mixture first.
