Repairing 50's stove

I have a natural gas stove made by Western Stove. The oven will go on and work for about 5-10 minutes(gets to about 200-250 deg) and then the main burner shuts off and usually won't start up again for hours. This stove has a pre-safety type of pilot called a Bryant Lighter, and I have taken it apart and made sure it was working right(the lever inside is perfectly free and the bi-metal strips seem to move the lever when heated). But the problem remains. I'm still not sure if the problem is in the main thermostat(Wilcolator valve) or in the pilot, so I'm wondering if it is possible to remove the main thermostat valve and the pilot and replace them with a newer safety pilot w/electronic ignition and a matching valve.

Has anyone ever upgraded an old stove this way? Or repaired this type of problem.
