need receipe for candied green tomotoes

does anyone havea receipe for anything like a candied or pickled green tomatoes? not just the canned green tomatoes in vinegar. we tasted some last winter, tasted kinda like pickled watermelon rind or spiced apples, but were told they were green tomatoes. these were red as they used a type of food coloring and were crisp. have plenty of green tomatoes left to do something with!! thanks

Amy, the following recipe is in the Storey Bulletin A-24 on Great Green Tomato Recipes:

4 medium green tomatoes 2 cups sugar 1 cup water

Wash green tomatoes and cut into quarters. Scoop out seeds and pulp and discard. Cut fleshy outer meat into small pieces and drain thoroughly. Combine sugar and water in a heavy skillet and bring to a boil over medium heat. Cook to the soft ball stage (238 degrees). Slowly add half the cut-up tomato pieces and simmer until clear. Remove pieces and drain. Reheat syrup to boiling and drop in remainder of green tomato pieces and repeat. When all pieces are cooked and drained, roll them in granulated sugar. Use in fruit cakes, candies, cookies or in any way you would use candied fruit. Will keep for several months in the refrigerator. May be frozen. If desired, syrup may be colored red or green or yellow with food coloring before adding tomato bits.

I've never used this recipe. I guess if you ate them like candy, you could cut the tomato into larger pieces. You could also add spices like cinnamon and cloves to give them a spicy taste. Good luck.

thanks katherine, but still not what we are looking for. should maybe have said "spiced" green tomatoes. will keep your receipe though.
