Recipe for Mrs Wages Lime Pickles

In answer to the Emails, here is the lime pickle recipe.

Do not use any Alumimun pots!!! 7 pds of cukes slice 1/2 inch thick, 1 cup of lime, 2 gals of water, 8 cups of white vinegar, 8 cups of sugar, 1 tbs. salt, 2 teas pickling spice,

Soak cukes in the 2 gals of lime water, Put the one cup of lime in water, and soak over nite. Remove cukes, and throw away lime water, rinse three times in clear ice cold water, Now soak three hrs in ice water,Now get a large pot and put in vinegar, sugar salt, and pickling spice, bring to low boil, and stir till sugar is disolves, remove from heat, and add cukes.Soak over nite. Next day bring cukes to boil[ that is all the syrup and liquid in pot with the cuke}And low boil for 35 mins. fill hot clean jars with cukes and liquid to 1/2 inch from top of jars,Process 10 mins for pints, 15 mins for quarts, that is hot water bath. lots of work, But they are so good and crunchy, and the syrup is so good, I was tasteing it all the time in processing, I think I am pickled. Irene, save the juice and use it to pickle other stuff. We like pickled beets but dont grow the beets. I buy them canned at the store and drain off the juice. Heat the pickle juice and pour over the beets and refrigerate them over night. Its good for makin bean salad. I drain a can of chickpeas, grn. beans, wax beans,kidney beans. Add diced onion,g.pepper and pour hot pickle juice over and chill them over night. You can get a lot of good from one jar of pickles. Oh yes, you can sub. zuchinni or green tomatoes in the pickle recipe and they come out as cruncy. I've made over 50 jars of these pickles this year and wont have a jar left by this time next year. Irene, when you say lime do you mean like the lime we spread on our fields?

No this is not the lime that you use on your fields. Its hydrated lime. I'm not sure what the difference is but I know you cant use the stuff at the hardware store in its place. The hydrated lime is found in the grocery store. Blessings Peggy
