Pumpkin Butter Recipe Needed

There was a recipe many years ago about making pumpkin butter... does anyone have the recipe (want a cooked one not microwave type)?

There is also a posting in the archives from last year on pumkin butter, and I believe more than one recipe listed there. I plan to make some myself this year, it sounds yummy! Jan

I have a cookbook called "Pumplin Lovers Cookbook" and here are two pumpkin butter recipes I found in there. I have NOT tried them, so I don't know it they're good or not. RECIPE 1. Stew pumpkin down as low as possible until you have about 1 gallon, add qt of molasses and l pound of sugar. Cook until real thick and stir constantly to keep from burning. When done, add a teaspoon each of allspice, cinnamon and cloves. IT DOES NOT TELL HOW TO PROCESS IT. RECIPE 2. 6 lbs pumpkin, 2 TBS cinnamon, 2 TBS ginger, l tsp allspice, 5 lbs light brown sugar, 5 lemons-juice and grated rind, 2 cups water--Clean out and peel the pumpkin; put through fiine blade of a food chopper. Add spices, sugar, lemon juice and rind. Let stand overnight. In morning, add water, bring to a boil; cook gently until soft and clear. Continue to cook to desired consistency. Pour into hot jars and seal. THIS ONE ALSO DOES NOT TELL HOW LONG TO PROCESS. You may ask your extention agent how long to process them to be safe. I would think you could also used canned pumpkin if you didn't have enough fresh. Like I said, I haven't tried either of these recipes and they really don't give any good processing info, but I thought they might be of some help to you. Good success to you! Sharon
