Preserving Bananas

Other than freezing, what would be good ways to preserve bananas for use in baby food?

Answers

Perhaps you could dehydrate them and then rehydrate them in juice. I haven't tried it but it might be worth the time to find out. Please, let me know if you do try.

Bananas are fine just dehydrated and eaten dry. You can either slice them into 1/4" thick discs to make banana chips or split them legnthwise along the natural seam and dry them in strips. Once dried, vacuum pac them to maintain freshness.

puree them,, make bannana leather,, or add it to other jams/jellies fro a unique taste.

A juicer I just bought says if you "juice" bananas you get a puree, so I would think you could puree or mash them, add lemon juice if you wish to prevent browning, then can them. There are recipes for making banana jam and banana butter, so you should be able to can the puree, too and use it for breads or baby food. Jan

I buy bananas in bulk and put directly into the freezer with the skins on, inside the box they come in. When we want to make shakes, we take out 2 bananas, put in blender with our goat milk, honey, and other fruit, really great. They stay good for about 6 months in the freezer. ENJOY!

Whenever my bananas start to get a few spots on them, I throw them into the freezer,unpeeled. When I'm ready to make banana nut bread or banana cake, I just defrost them on the counter in a dish, then mix in the batter and bake. MMMMmmmmmmm...ain't nuthin' better!! I will admit though, that they sometimes get in the way as I have a very small freezer. But then again, you can always pull them apart and stuff one here and one over there etc. It alll works out. But BEWARE of falling bananas on bare toes - OUCH!! :o)
