processing kale--possible?

greenspun.com : LUSENET : Countryside : One Thread

Does anyone here process kale? Can you give me the specifics? We have blanched and frozen it but it comes out pretty tough. Might be good in soups (I haven't tried), but too tough for stirfry. thanks for any ideas.

Kale is my favorite green, and I freeze some every year. But you must cut the leafy part away from the "stalk" running the length of each leaf. Just follow the instructions for greens in the Ball Bluebook. You can also just leave it in the garden, as it is not frost susceptible and can still be picked even if it has snow on it. You might have to fight the deer for it, though. GL!
