freezing eggs

I've seen in past forum issues about how to freeze eggs. However I don't recall seeing anything about how long they keep? If you have a bunch to freeze, do you need to wrap them in freezer paper also to avoid freezer burn?

Frozen eggs keep for about 6 months if they are wrapped well. You can freeze egg whites and yolks separately, but you need to add salt or honey to the yolks to keep them from getting pasty and hard when you thaw them. If you freeze whole eggs you need to add the salt or honey for the same reason. Add 1 tsp. salt or 1 tsp. of honey to each cup of yolks or each cup of whole eggs. There are about 12 yolks in a cup and about 5 whole eggs in a cup. Make sure you mark which ones have the salt and which ones have the honey in them. You can freeze them in ice cube trays and store them in freezer bags and thaw out the amount you need. Hope this helps!!

We freeze them in ice trays. Scramble & salt & pepper to taste, then freeze. We have kept them as long as 9 months. After they freeze either seal the whole tray in a freezer bag or pop em out and wrap em seperatly in wax paper before bagging them.

When I get eggs that are too large to freeze in ice cube trays, I freeze them in muffin tins.
