I cleaned out my freezer of all my deer meat (about 50 pounds) and am going to make sausage in casings. Anyone have a good recipe ? I found a site that had this recipe:

venison sausage:

yields 24 servings

5lb. cubed venison; 1lb. cubed suet; 3 T salt; 1 T black pepper; 1 t red or cayenne pepper; 1 t sage 2 t garlic powder sausage casings

after grind & mixing the venison and suet with the seasonings, fry a small patty to check for taste. If it's too mild add a small amount of red pepper until proper taste is reached. if it is too hot add more venison. Stuff in casings and smoke for 28 to 30 hrs.

We didn't add as much red pepper as called for to start with added it alittle along the way.

We also did not smoke ours just froze it. It's great.
