Making Rhubarb and Cranberry Juice

greenspun.com : LUSENET : Countryside : One Thread

Has anyone made rhubarb juice or cranberry juice?? Instruction would be greatly appreciated. I have tons of cranberries and rhubarb in the freezer that need to be used up and we are out of juice, so I thought....

Thanks,

Silvia

I planted rhubarb last year just to use this recipe, hope I get enough to try it 6c diced rhubarb 12c water 1c sugar Combine rhubarb and water in large stainless steel or enamel pan. Bring to a boil, reduce heat and simmer 10 min or until rhubarb is soft. Strain through chhesecloth or jelly bag. Rinse saucepan thoroughly and return juice to it, add sugar. bring to a boil stirring until sugar is dissolved. To can the juice, put it into hot sterilised pint jars - 6 for one recipe, add your prepared lids. place in canner and process 5 minutes. sorry I can't tell you if its a good recipe or not, I will try it this year though.

Thanks for posting rhubarb juice recipe, Terri! Rhubarb is my favorite fruit, but I wouldn't have thought of making juice of it. Have copied recipe, will try it this year. Sandy
