Baking bread in glass

greenspun.com : LUSENET : Countryside : One Thread

Help! I tried baking bread in my new glass pans today and it did not turn out well. I am used to using the non stick silver pans but do not like them as the coating comes off over time.

What adjustments do I need to do to help the bread come out right?

I always use glass loaf pans or even corning ware. I spray the dish well. When you use glass you're usually supposed to turn the heat down 25*. Don't give up.:~}

I've just used lard, butter or shortening (Crisco) to grease the pans and haven't had any problem. GL!

Check your recipie... it may be something you didn't do or add. I use glass loaf pans to break bread in and it works just fine. Try baking at a slightly lowere temp.. maybe 15 - 20 degrees lower.
