Question on safe ingrediences in making summer sausage

Did not use up all the ingrediences from the summer sausage kit last year and someone told me the ingrediences are not safe if kept for a long period of time? Can anyone help me on this question? The ingrediences are as follows-salt-dextrose-sugar-garlic powder-sodium brythorbate-tracalcium phosphate. I do not believe salt,sugar,or garlic powder will spoil but do not know the life shelf of the fancy name ones. Any help would be appreciated,Do not want to make deer summer sausage and have it go bad. If anyone has a good recipe and would like to share, it would be appreciated very much.

One question - what is sodium- tracalcium phosphate ? We make our sausages and salamis with just salt and some spices like chili pepper or black pepper or fennel seed etc. etc.

Kelly, I have no idea what sodium erythorbate or tiacalcium phosphate are, they are listed with the ingredients on the package of summer sausage mix. Mary

I don't know what that unpronounceable name is either but I usually don't use anything I can't pronounce. I'd throw it out and take the salt and spices suggestion.

I've always used "Morton's tender Quick". A teaspoon will treat 25#'s of maet. Just add it to your favorite recipe. I too do not eat it if I can't pronounce it.
