pumpkin chocolate chip muffins (yummy yum.....)

yes!!!! these things are soooo good! mix well 1 can (or 2 cups) pumpkin, 1 1/2 cups veg.oil, 4 eggs, and 2 cups sugar. seperately mix 3 cups flour, 2 tsp. baking soda, 2 tsp. baking powder, 2 tsp. cinnamon, and 1/2 tsp. salt. Add wet ingredients to dry and then fold in about 3/4 of a package of chocolate chips. Bake in muffin cups high heat about 375 for 15 minutes or so. Yum! You wouldn't believe how good these are:) !

Beth, do you think this would work with whole wheat flour? Also, have you tried it using a loaf pan instead of the muffin cups, wondered if it would still work. I'm just lazy about filling all those muffin cups. I'm a reluctant cook! Annie in SE OH.

Yum is right, Beth! Anyone who hasn't tried the pumpkin/chocolate combo needs to. It's wonderful, I have a cookie recipe with the pumpkin & chocolate chips, my 8 yr. old prefers them over regular chocolate chip cookies, & everytime I take them somewhere I get requests for the recipe. They're soft & cake-like. Now I'll have to try the muffins:-)

Annie, I've never tried the pan recipe; but as for whole wheat I would half and half it; whole wheat is "heavier", also adding just a touch more of the leavening agents; also I had made variations of this same recipe without the chocolate, but using whatever I had handy: grated carrots, pineapple, sunflower seeds, nuts, etc.:)
