Megan, do you mean bread made without whole wheat or bread made without any wheat flour, neither white or whole wheat? Bread without any wheat flour is very difficult to make. I have bought some bread made with rice flour but have never had any luck making it. Corn bread can be made without wheat flour. Yeast bread would be difficult if not impossible to make without some wheat flour as the gluten in wheat is needed to get the right texture. Sometimes people who do not tolerate wheat can tolerate spelt although I believe spelt is an ancient form of wheat and yeast bread can be made using it. It can be purchased from health food stores. Hope this helps some. If it is just a bread recipe made from white wheat flour that you want, let me know. I have several good recipes.

Do you need to avoid wheat entirely? Depending on the reason, you might try spelt, which is similar to wheat but can be eaten by many people who are allergic to wheat. Spelt doesn't have the gluten of wheat, but is better than rice, etc. I use it for waffles, pancakes, etc., and buy sourdough splet bagels as a treat from the food co-op. I'm not much good at making real bread but it works okay for yeast raised pizza dough, too. There are recipes out there for using oats, rye, and other grains instead of wheat, too.

If you have an intolerance to wheat, be careful with oats, barley, and rye as well, as they have gluten also. It may be the gluten which is not tolerated (the voice of sad experience).

Much as I like fresh whole wheat yeast bread, I also like flat bread that isnt risen in any way. Use an old cast iron tortilla press and you can use about any kind of flour including millet. Have to admit, wholewheat is easiest to do as some of the others dont hold together well, but do have interesting tastes.
