Fruit leather & bananas

Has anyone used bananas to make fruit leather? I've never cared for banana chips (too hard), but would like to use some old bananas. No time to use for baking.

I've never made fruit leather with bananas but I dry them whenever they're on sale. They are never hard but pliable. Soak them in pineapple juice or honeywater, drain and dry or just dry them sliced. Enjoy!

I have used bananas in combination with other fruits but the flavor of bananas alone to us is unpleasant. It discolors badly unless you add Fruit Fresh or some acidic juice. We really like them pureed' with strawberries, blueberries and raspberries. I put the raspberries through a sieve to remove the seeds first. It is possible to dry the banana slices, rehydrate and use in granola, baking or even banana pudding or banana cream pie later. To make the pudding or pie, I add a little more milk to adjust for the moisture absorbed by the bananas.

The best use that I have found for old bananas is to freeze them whole, and to use them for shakes in the morning. I puree frozen bananas vanilla or plain yogurt and milk (and any other fruit that is handy) I put them all in the food processor or blender and enjoy!! It is both healthy and delicious!!! The frozen part takes the place of the ice cream, and if you use lowfat milk and yogurt you are set!! My only problem is that I have found a source of raw milk with the cream on top( So much for low fat) cnllewis@email.com
