Favorite freezer corn recipe (NOT low fat!)

This is the recipe that I use to put up 50 or 60 quarts of corn in the freezer each year ... and it's never enough!!

Barb's Freezer Corn

8 cups corn (cut off the cob, then measured) 1 cup water 1 tablespoon sugar Up to 1 teaspoon salt 1 stick (1/2 cup) butter

Combine all ingredients in a large pan, bring to a boil, stirring to prevent sticking and scorching. Boil 5 minutes. Cool ( I dump in roaster pans sitting in ice water and stir). Pack in freezer cartons or bags, freeze.

Now, in return, I need a good spagetti sauce to cook up and can. No meat, I'll add it when I open the jar. I like chunks of tomato, onion, green and red pepper and garlic for sure. I have a Victorio strainer, so no problems getting tomatoes to juice or sauce stage. Many thanks!!

Polly, there is a lady at our church who makes the best corn I have ever tasted. WONDERFUL!!! But I can't get it from her. Apparently it's a secret or some such thing. It is sort of like a cream style but thicker and WAY better than what ya get in a can.It's sweet and buttery and WONDERFUL! Did I say it's WONDERFUL.Oh I do hope your's is like that.My corn is ready soon.

Bonnie, that favorite tasting corn of yours might be made with Philly creme cheese and butter in it. I don't remember the portions of each, but you can experiment for that. It sure is mighty good.

Thanks for the recipe. It's great! The whole family just loved it. I've never frozen corn before. I was surprised at how many ears it took to make very much. I don't have enough room to grow corn so I bought about 40 ears. It made about 4 qt. bags. I can't imagine how many ears it takes to 50 qts. like you do. I'll just keep buying it as I can and hope my family doesn't eat it as fast as I can make it!

You sure are right about it taking a lot of ears to make a little corn!! Today - 136 ears yielded 12 quarts. We plant 8 rows of early corn and 8 rows of mid-season - rows are about 200 or so feet long. We just started picking the early season corn. So far, I have 20 quarts put up, and I have only picked three rows - and I've given away a lot of what I picked. We are the only ones in our extended family that live in the country - so everyone counts on us for sweet corn during the season! I won't let them eat any of the freezer corn until after all of the roastin' ears are gone!! Hope your family enjoys it as much as we do!

(PS - I used to put this up in pint containers....'til I married my hubby - he can eat a whole pint by himself!)
