Need Recipe for Blackberry Jam/WINE

Have tons of blackberries, most of which are ready to pick this week...I did a search on the internet for recipes and got zilch for plain blackberry jam..I do not want to mix and match right now, just plain jam..Also, would love to have a tried and true recipe for blackberry wine...These are wild blackberries..about 100 or so bushes, so we will have some and the birds and beasties will feast on the rest...but please hurry with recipes while they are still there!! Lesley, The following recipe is from the Kerr Home Canning and Freezing Book, copyright 1958. It makes beautiful, full flavored jam. Jams are made of crushed fruit, mixed with sugar and boiled rapidly until thick. Rinse and pick over berries. Crush and measure berries and juice. Heat in kettle on medium heat until warmed through. Add 3/4 cup sugar for each cup of berries and juice. . Cook, stirring frequently until thick.(No free liquid)Pour into sterilized jars leaving 1/4 inch head space. Put on cap and screw band firmly tight. Process in boiling water bath 10 minutes. Enjoy.

I know you don't want to mix and match but I would suggest you add a green apple or 2 to each batch of jam - it makes it thicker and tastes even better!! As for the wine I only know a "fake" recipe , but it is good ...Mix 2KGs of blackberries in 1 liter of red wine, add one Kg. of sugar . put this in some sort of jar and let it sit for 41 days. Filter and bottle.... it is really good after a couple monthes ....OK, actually I've never made the stuff with blackberries, just with cherries, but as soon as our blackberries are ready I think I will try it out !!! We get homemade wine from our neighbors so I haven't a clue which wine you should use..... Come to think of it last year I made blackberry liquor using grappa (from my neighbors)....I don't like hard alcohol much but it was a big hit with my friends.

Thanks so much for the website addys! I am overrun with blackberries and needed to try something different. I think I'll probably freeze almost 20 gallons or more this yr. Our farm is mostly cut over and then we are bordered by timber company land loaded with tons of bushes!

Looks like you have quite a few jam/wine recipes, but I'll add why not can a few pints in a medium syrup - they really add some new flavour to apple crisps etc in the winter, just don't add any sugar or honey to the apples or whatever recipe used.

My wife and I contacted them for their free catalog ( which contains pages of very useful wine making tips) and after ordering just the "basics" in winemaking supplies found our total at just over 15 dollars. with those supplies and the free recipe book , I have been able to enjoy some rather nice country wines.

I am currently up to my armpits in alligators, this being the "busy" season. No wait! It must be lobsters - it's you guys who have alligators! Anyway, I barely have time to visit this site every couple of days. Hence, I will post, or send, my tried and true wine recipe as soon as time permits. Meanwhile, just freeze them. I generally add a little sugar before I freeze them, but if you asked me why, I'd have to give the Amish answer: "I don't know, I just do!" GL!
