apricots (non-sugar/sweatener ways to preserve)

Apricots were only $.88# this week, so I bought a case, they're really good. Does anyone have a favorite rec. or suggestion for them? Maybe something different. I have dried apricot from the co-op and I can't use white sugar or artificial sweetners. Thanks

I can smell them now all the way from Alaska. Can them like peaches, make delicous jam, freeze them, etc.,etc. Long ago and far away I remember my aunt boiling them down for jam but it requires careful attention.

Can use plums or apricots..... Make a potato dumpling recipe. If using a drop dumpling, use extra flour so you can roll out the dough. Cut circles about 4" diameter. Pit the apricots, and replace pit with sugar cube (optional) place an apricot in the center of each dough circle and fold up into a ball. Drop in boiling water, reduce heat and cover and simmer about 15 minutes. Don't boil....tyhey'll fall apart. In another pan, mix plain breadcrumbs with sugar at a 2 to 1 ratio. Stir in 1/4 c melted butter for each cup of crumbs and mix well. Roll cooked dumplings in sweetened buttered crumbs and enjoy!!

Sorry, no recipes.

Enough fresh ones never make it past my five-year-old son for me to cook with. Apricots are his favorite fruit. He has started planting all the seeds from the ones he eats. If 1\10 ever make fuit, we'll be able to supply the county!
