How do I make Soy Bean Milk?

I am stuck with an enormous amount of Soy Beans for Y2k. I entended to make Soy Bean Milk among other things,I lost my Countryside article.Please help! Ada

Wow! I would truly like to help you, but that is a full page article and I don't have a scanner. My wrist would never hold out that long.(carpel tunnel) If no one has a scanner and the article, I could send it to you in segments. Give it a couple of days to see if anyone can do it for you, if not I'll start putting in a couple of paragraphs at a time.

soymilk [from the farm cookbook]rinse 2 and1/2 cups whole soybeans, soak in 5 cups water 8 to 10 hours[kept in fridge to stop spoilage]. blend 1 cup soybeans and 2 and 1/2 cups hot water,blend at high speed about 1 min[fine slurry].Pour into heavey pot or double boiler, repeat untill all beans are blended.set over med high heat until it starts to boil[ stire occasionally]. When it starts to boil turn heat down Immediatly and simmer at low boil for 20 min[watch out it dosnt boil over]. Straining soy milk,set cloth lined collander over large pot, laddle soy milk into collander, catch pulp in cloth , tie sut and press with spoon to remove as much milk as possible. Cool Immediately. use in 5 days.can be frozen,add sugar, vanilla ect for drinking.can be made thicker thinner by adjusting proportions of beans to water in this recipe.
