North Sung Dynasty poet Su Dong Po was the very first to use rain water to brew tea.

He wrote: "During rainy season, put utensil in the court yard to collect rain water. The water so collected is sweet and smooth beyond words. It is nice and good to use it to brew tea or cook herbal medicine; drink it constantly will enhance longevity"
