I've left the reference in my other brain, but I read recently that one of the reasons why food poisoning is on the increase is quite simply that we've moved from wooden to plastic food preparation surfaces.

A Bulging Brain has done some tests and found that wooden food preparation surfaces actually inhibit the growth of bacteria. That's in stark contrast to the claims of commercial vendors of high tech antibacterial devices. But then, they're selling something.

Just adding... the source of this was a non-Y2K historical fanzine, and they also mention that the reason behind throwing coins into "wishing wells" is that silver has been found to be an incredible anti-bacterial agent. The view of mediaeval Europe being a cesspit of disease and bacteria may not be as true as has been commonly believed.
