Hey Becky; I may have a receipe around here for that. It sounds like a good idea. I have ben making wine for 7 years and have been lucky. Last year a friend gave me a hydrometer, and now I would not be with out one. If you do not have one get one. A hydrometer (if you don't already know) measures specific gravity or sugar in a water soultion. Depending on the amount of sugar in the fruit, the potential alcohol you desire and the type of yeast you use a hydrometer will help you create a good receiple with consistent results.

i would think you could make a tea out of the strawberry leaves and ferment that. i make a good wine out of mint leaves and honey. i would take a gallon container and fill it loosely with clean strawberry leaves. then bring to a boil 2# of honey and enough water to make one gallon and pour hot over the leaves. let cool to 70 degress F and add yeast and 1 teas. acid blend and 1 teas. yeast nutrient (or the outside rind and the juice of 2 lemons and yeast)and let sit at room temp. for 3 days. Strain and airlock. ferment for 1 month and try it. If it seems too dry, add 1 to 2 cups sugar, dissolved in water and airlock it again. let sit for 2-3 more months and try it. you can probably drink it or bottle it then.If you have any questions, send me an email. this sounds like it could work good. i use to make tea out of strawberry leaves years ago. i think i will try this this spring!

Can't help you there, but I have a great recipe for strawberry/rhubarb wine that I have perfected over the years. Loving strawberry/rhubarb pie, I set out to make an alcoholic, liquid version thereof. I believe I have succeeded.. Let me know if you want it! Good luck.
