Question about Nibbler

I watched Phil's nibbler recording, it plays back fine to the shown score, but it suddenly stops with some letters on the right side of the screen and some in the center. Why exactly does/did this happen? And how is Phil completing levels without even collecting all the icons...I'm a wondering kid, what can i say.
